Creamy Alfredo Chicken Zucchini Noodles

Zoodles or Zucchini Noodles is a yet another healthier alternative for a pasta lover. Ever since we switched our lifestyle to following a healthy diet, it is sometimes really difficult and tiring to come up with something healthy as well tasty. Zoodles are a fun way to switch things up if you want a lighter version of pasta by cutting down your carb with something healthy and nutritious. Alfredo is my favourite choice of sauce for pasta. This easy to make recipe is a way to enjoy your creamy alfredo, with less guilt.

Ingredient

  • 1 skinless boneless chicken breast 220gm, cut into bite-sized
  • 1/2 small onion, chopped
  • 2 cloves minced garlic
  • 1 cup heavy cream or 1 cup full fat milk
  • 1/2 tsp all purpose flour
  • ½ cup Parmesan or any other grated cheese
  • ½ teaspoon oregano
  • salt
  • pepper
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 large zucchini spiralized**

Method

  1. Slightly season the chicken with salt and pepper.
  2. In a large skillet heat one tablespoon olive oil on medium-heat, add the onion and garlic and cook until fragrant, now add the chicken. Sauté the chicken, stirring occasionally until the chicken is white.
  3. In another pot pour milk/cream and butter and melt butter in it. Season the cream with salt, pepper, whisk in flour to incorporate until it becomes thick sauce. Now add in chicken and cook it on low-heat for 5-8 minutes stirring occasionally.
  4. Add the zoodles to skillet, mix it with the sauce, add the grated Parmesan or any other cheese and bring it to boil. Don’t cook the zoodles longer than 2 minutes, to avoid the zoodles from becoming mushy and the sauce to become watery.
  5. Serve it immediately.
