Thai Basil Chicken

One of the few cuisines my hubby enjoys eating is Thai, though I am not very fond of Thai cuisine (except tom yam soup) this one surely made me change my mind. Thai Basil Chicken, is another easy and insanely flavourful dish. I surely enjoyed making it as much as I loved eating it. So, here’s the recipe;

Serves : 2 -3

Ingredients

  • 2 chicken breasts, cut into bite-size pieces
  • 2 tbsp cooking oil
  • 1 tsp red chilli flakes
  • 1 tsp white pepper powder
  • 3 bird’s-eye chillies finely chopped
  • 6 cloves minced garlic
  • 1 small onion, roughly chopped
  • 1 tbsp oyster sauce
  • 2 tsp red chilli powder
  • 1 tsp brown sugar or regular sugar
  • 2 tbsp soy sauce
  • salt to taste
  • 6-7 finely chopped fresh basil leaves

Method

  1. In a bowl marinate the chicken with salt, white pepper, oyster sauce, soy sauce and sugar and let it sit for an hour.
  2. Heat oil in a pan or wok. Toss in garlic, chilli flakes, and  onions, sauté until fragrant.
  3. Add marinated chicken, cook until chicken is no longer pink and it is slightly brown.
  4. Now add in bird-eye chillis and red chilli powder and let it cook for another 10 mins. Add little water if desired to prevent burns.
  5. Finally stir in the basil leaves. Turn off the heat once the leaves are wilted.
  6. Transfer it to a serving plate and serve with rice.
